Ingredients

  • 1 cup rolled oats (old-fashioned)
  • 1 cup milk (dairy or non-dairy)
  • 1 ripe banana, mashed (about 1/2 cup)
  • 1/4 cup maple syrup (or other sweetener like honey/agave)
  • 1 tbsp lemon juice
  • 1 tsp lemon zest
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup fresh or frozen blueberries
  • 1/2 tsp vanilla extract (optional)

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease an 8×8 inch baking dish or a few individual ramekins.
  2. In a large bowl, mash the ripe banana until smooth. Stir in the milk, maple syrup, lemon juice, lemon zest, and vanilla extract (if using) until well combined.
  3. Add the rolled oats, baking powder, and salt to the wet ingredients. Mix thoroughly until everything is evenly incorporated.
  4. Gently fold in the fresh or frozen blueberries, being careful not to mash them too much.
  5. Pour the mixture into your prepared baking dish or ramekins, spreading it evenly.
  6. Bake for 25-30 minutes, or until the oats are set, lightly golden on top, and a toothpick inserted into the center comes out clean (a few moist crumbs are okay).
  7. Remove from the oven and let cool for a few minutes before serving. Enjoy warm, optionally topped with a drizzle of extra maple syrup or a dollop of yogurt.
