Ingredients

  • 2 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • 1 cup (2 sticks) unsalted butter, softened
  • 1 ¾ cups granulated sugar, divided
  • 2 large eggs
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons lemon zest (from 2-3 lemons)
  • ½ cup powdered sugar, for rolling (optional, but recommended for crackle)

Instructions

  1. In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
  2. In a large bowl, using an electric mixer, cream together the softened butter and 1 ½ cups of the granulated sugar until light and fluffy (about 2-3 minutes).
  3. Beat in the eggs one at a time, mixing well after each addition. Stir in the fresh lemon juice and lemon zest until just combined.
  4. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined and no streaks of flour remain. Do not overmix.
  5. Cover the dough with plastic wrap and refrigerate for at least 30 minutes, or up to 2 hours. This helps prevent spreading and enhances chewiness.
