Ingredients

  • 2 cups cooked chicken, shredded or finely diced
  • 8 oz cream cheese, softened
  • 1 (1 oz) packet ranch seasoning mix
  • 1 cup shredded cheddar cheese (or a cheddar-jack blend)
  • 1/2 cup cooked bacon, crumbled
  • 6 large (10-inch) flour tortillas
  • 2 tablespoons chopped green onions (optional)

Instructions

  1. In a medium bowl, combine the softened cream cheese and ranch seasoning mix. Mix until smooth and well incorporated.
  2. Add the shredded chicken, shredded cheddar cheese, and crumbled bacon to the cream cheese mixture. Stir well until all ingredients are evenly distributed. If using, add the chopped green onions now.
  3. Lay one flour tortilla flat on a clean surface. Spread about 1/2 to 3/4 cup of the chicken mixture evenly over the entire surface of the tortilla, leaving a small border at the edges.
  4. Tightly roll up the tortilla from one end to the other. Ensure it’s rolled as snugly as possible to prevent unraveling.
  5. Repeat with the remaining tortillas and chicken mixture.
  6. Wrap each rolled tortilla tightly in plastic wrap and refrigerate for at least 1-2 hours, or preferably overnight. This step is crucial for the pinwheels to firm up and hold their shape when sliced.
  7. Once chilled, unwrap the tortillas and use a sharp knife to slice each roll into 1-inch thick pinwheels.
  8. Arrange on a serving platter and serve immediately.
