Easy Miso Soup Recipe – Quick & Delicious

Ingredients

  • 4 cups dashi (Japanese soup stock – instant granules or homemade)
  • 1/4 cup miso paste (white or awase miso recommended)
  • 4 oz silken tofu, cut into 1/2-inch cubes
  • 2 green onions, thinly sliced
  • 2 sheets dried nori (seaweed), cut into small squares or strips
  • Optional: 1/2 cup enoki mushrooms, trimmed
  • Optional: A pinch of wakame seaweed (rehydrated)

Instructions

  1. Prepare the dashi: If using instant dashi granules, dissolve 1 teaspoon into 4 cups of hot water. If using homemade dashi, bring 4 cups of dashi to a gentle simmer in a medium saucepan.
  2. Once the dashi is simmering, reduce the heat to low. Spoon the miso paste into a small bowl and add about 1/2 cup of the warm dashi. Whisk until the miso paste is completely dissolved and smooth.
  3. Pour the dissolved miso paste back into the saucepan with the remaining dashi. Stir gently. IMPORTANT: Do not boil the soup after adding the miso, as this can destroy its delicate flavor and beneficial probiotics.
  4. Add the cubed silken tofu and optional enoki mushrooms or rehydrated wakame to the soup. Let it heat through for 1-2 minutes until everything is warmed.
  5. Ladle the hot miso soup into individual serving bowls.
  6. Garnish each bowl with thinly sliced green onions and small pieces of nori seaweed before serving immediately.
