  • 2 cups (250g) all-purpose flour

  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup (113g) unsalted butter, melted and cooled, or 1/2 cup vegetable oil
  • 1 cup (200g) granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3-4 very ripe large bananas, mashed (about 1 1/2 cups)
  • 1 cup (170g) chocolate chips (semi-sweet or dark)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan, or line with parchment paper.
  2. In a large bowl, whisk together the flour, cocoa powder (if using), baking soda, and salt. Set aside.
  3. In a separate medium bowl, whisk together the melted butter (or oil), granulated sugar, eggs, and vanilla extract until well combined.
  4. Stir the mashed bananas into the wet ingredient mixture.
  5. Pour the wet ingredients into the dry ingredients. Mix with a spoon or spatula until just combined. Be careful not to overmix; a few lumps are okay.
  6. Gently fold in the chocolate chips. Reserve a few for sprinkling on top if desired.
