Easy Skillet Zucchini and Mushrooms-Quick Side

Ingredients

  • 2 tbsp olive oil (or avocado oil)
  • 2 medium zucchini, trimmed and cut into 1/2-inch half-moons or quarter-moons
  • 8 oz cremini mushrooms (baby bellas), wiped clean and sliced
  • 2 cloves garlic, minced
  • 1/2 tsp dried oregano (or Italian seasoning)
  • Salt to taste
  • Black pepper to taste
  • 1 tbsp fresh parsley, chopped (for garnish, optional)

Instructions

  1. Heat olive oil in a large skillet or non-stick pan over medium-high heat.
  2. Add sliced mushrooms to the hot skillet. Cook for 3-5 minutes, stirring occasionally, until they release their liquid and start to brown. This helps develop their flavor.
  3. Add the zucchini to the skillet with the mushrooms. Stir well to combine.
  4. Add minced garlic, dried oregano, salt, and black pepper. Stir everything together.
  5. Continue to cook for another 5-7 minutes, stirring occasionally, until the zucchini is tender-crisp and the mushrooms are nicely browned. Be careful not to overcook the zucchini; it should still have a slight bite.
  6. Taste and adjust seasoning if necessary.
  7. Remove from heat. Garnish with fresh chopped parsley, if desired.
