Lemon Blueberry Truffles-Easy Gourmet Treat

Ingredients
- 8 oz cream cheese, softened
- 1 ½ cups powdered sugar
- 1 ½ cups vanilla wafer crumbs (about 40 wafers, crushed)
- 1 tbsp lemon zest, plus more for garnish
- 1 tbsp fresh lemon juice
- ¼ cup blueberry preserves or jam
- 16 oz white chocolate melting wafers or good quality white chocolate chips
- 1 tsp coconut oil (optional, for smoother coating)
- Freeze-dried blueberry powder or extra lemon zest for garnish (optional)
Instructions
- In a medium bowl, beat the softened cream cheese with an electric mixer until smooth.
- Add the powdered sugar, lemon zest, and lemon juice, beating until fully combined and creamy.
- Stir in the vanilla wafer crumbs and blueberry preserves until well incorporated. The mixture should be thick and slightly sticky.
- Cover the bowl and refrigerate the truffle mixture for at least 1 hour, or until firm enough to roll.
- Once chilled, scoop out small portions (about 1 tablespoon each) and roll them into smooth balls. Place the rolled truffles on a parchment-lined baking sheet.
- Return the truffles to the refrigerator or freezer for another 15-20 minutes to firm up again before coating.
- Melt the white chocolate in a microwave-safe bowl in 30-second intervals, stirring after each, until smooth. If using, stir in the coconut oil for a thinner consistency.
- Dip each chilled truffle into the melted white chocolate, ensuring it’s fully coated. Use a fork or a dipping tool to gently tap off excess chocolate.
- Place the coated truffles back on the parchment-lined baking sheet. While the chocolate is still wet, sprinkle with additional lemon zest or freeze-dried blueberry powder, if desired.
- Allow the truffles to set at room temperature or in the refrigerator until the chocolate is firm. Store in an airtight container in the refrigerator for up to a week.
