Ingredients
- 1 cup rolled oats (old-fashioned)
- 1 cup milk (dairy or non-dairy)
- 1 ripe banana, mashed (about 1/2 cup)
- 1/4 cup maple syrup (or other sweetener like honey/agave)
- 1 tbsp lemon juice
- 1 tsp lemon zest
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/2 cup fresh or frozen blueberries
- 1/2 tsp vanilla extract (optional)
Instructions
- Preheat your oven to 375°F (190°C) and lightly grease an 8×8 inch baking dish or a few individual ramekins.
- In a large bowl, mash the ripe banana until smooth. Stir in the milk, maple syrup, lemon juice, lemon zest, and vanilla extract (if using) until well combined.
- Add the rolled oats, baking powder, and salt to the wet ingredients. Mix thoroughly until everything is evenly incorporated.
- Gently fold in the fresh or frozen blueberries, being careful not to mash them too much.
- Pour the mixture into your prepared baking dish or ramekins, spreading it evenly.
- Bake for 25-30 minutes, or until the oats are set, lightly golden on top, and a toothpick inserted into the center comes out clean (a few moist crumbs are okay).
- Remove from the oven and let cool for a few minutes before serving. Enjoy warm, optionally topped with a drizzle of extra maple syrup or a dollop of yogurt.
