Sweet Potato Brownies – Rich Moist & Delicious Recipe

Ingredients

  • 1 cup (250g) cooked and mashed sweet potato (about 1 medium sweet potato)
  • 1/2 cup (113g) unsalted butter, melted
  • 1/2 cup (120ml) unsweetened applesauce or 1/4 cup extra butter/oil
  • 1 cup (200g) granulated sugar
  • 1/2 cup (100g) packed light brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3/4 cup (75g) unsweetened cocoa powder
  • 1/2 cup (60g) all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup (170g) chocolate chips or chunks (dark or semi-sweet)

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease and flour an 8×8-inch (20x20cm) baking pan or line with parchment paper, leaving an overhang on the sides for easy removal.
  2. Cook the sweet potato: Pierce the sweet potato several times with a fork. You can bake it whole in the oven until very tender (about 45-60 minutes), microwave it until soft (5-10 minutes), or boil/steam it. Once cooked, let it cool slightly, peel, and mash until smooth. Measure out 1 cup.
  3. In a large mixing bowl, combine the mashed sweet potato, melted butter, applesauce (if using), granulated sugar, and brown sugar. Whisk until well combined and smooth.
  4. Add the eggs one at a time, whisking well after each addition until fully incorporated. Stir in the vanilla extract.
  5. In a separate medium bowl, whisk together the cocoa powder, all-purpose flour, baking powder, and salt.
  6. Gradually add the dry ingredients to the wet ingredients, mixing with a spatula or spoon until just combined. Be careful not to overmix.
  7. Fold in the chocolate chips or chunks until evenly distributed throughout the batter.
  8. Pour the brownie batter into the prepared baking pan and spread evenly.
  9. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out with moist crumbs, but not wet batter. Do not overbake to ensure fudgy brownies.
