Classic Macaroni Salad – Easy Crowd-Pleaser Recipe

Ingredients
- 1 lb (450g) elbow macaroni
- 1 cup mayonnaise (full-fat for best results)
- 1/2 cup celery, finely diced
- 1/4 cup red onion, finely diced
- 1/4 cup red bell pepper, finely diced
- 2 hard-boiled eggs, chopped (optional)
- 2 tbsp white vinegar
- 1 tbsp yellow mustard
- 1 tbsp granulated sugar
- 1/2 tsp salt, or to taste
- 1/4 tsp black pepper, or to taste
- Pinch of paprika for garnish (optional)
Instructions
- Cook the elbow macaroni according to package directions until al dente. Drain well and rinse with cold water to stop the cooking process and cool the pasta completely. Set aside.
- In a large mixing bowl, combine the cooled macaroni, mayonnaise, finely diced celery, red onion, and red bell pepper. If using, add the chopped hard-boiled eggs.
- In a small separate bowl, whisk together the white vinegar, yellow mustard, sugar, salt, and black pepper until the sugar dissolves.
- Pour the dressing mixture over the macaroni salad ingredients. Mix gently but thoroughly until everything is well coated.
- Taste and adjust seasonings as needed. You might want to add more salt, pepper, or a touch more sugar or vinegar depending on your preference.
- Cover the bowl tightly with plastic wrap and refrigerate for at least 2 hours, or preferably overnight, to allow the flavors to meld and develop.
- Before serving, give the salad another good stir. If it seems a little dry, you can add another tablespoon or two of mayonnaise or a splash of milk to reach your desired consistency. Garnish with a pinch of paprika if desired.
