Classic Macaroni Salad – Easy Crowd-Pleaser Recipe

Ingredients

  • 1 lb (450g) elbow macaroni
  • 1 cup mayonnaise (full-fat for best results)
  • 1/2 cup celery, finely diced
  • 1/4 cup red onion, finely diced
  • 1/4 cup red bell pepper, finely diced
  • 2 hard-boiled eggs, chopped (optional)
  • 2 tbsp white vinegar
  • 1 tbsp yellow mustard
  • 1 tbsp granulated sugar
  • 1/2 tsp salt, or to taste
  • 1/4 tsp black pepper, or to taste
  • Pinch of paprika for garnish (optional)

Instructions

  1. Cook the elbow macaroni according to package directions until al dente. Drain well and rinse with cold water to stop the cooking process and cool the pasta completely. Set aside.
  2. In a large mixing bowl, combine the cooled macaroni, mayonnaise, finely diced celery, red onion, and red bell pepper. If using, add the chopped hard-boiled eggs.
  3. In a small separate bowl, whisk together the white vinegar, yellow mustard, sugar, salt, and black pepper until the sugar dissolves.
  4. Pour the dressing mixture over the macaroni salad ingredients. Mix gently but thoroughly until everything is well coated.
  5. Taste and adjust seasonings as needed. You might want to add more salt, pepper, or a touch more sugar or vinegar depending on your preference.
  6. Cover the bowl tightly with plastic wrap and refrigerate for at least 2 hours, or preferably overnight, to allow the flavors to meld and develop.
  7. Before serving, give the salad another good stir. If it seems a little dry, you can add another tablespoon or two of mayonnaise or a splash of milk to reach your desired consistency. Garnish with a pinch of paprika if desired.
