- 1/2 teaspoon ground cinnamon (optional, for filling)
- 1 cup all-purpose flour
- 1 cup old-fashioned rolled oats
- 1/2 cup packed light brown sugar
- 1/4 cup granulated sugar
- 1/2 teaspoon ground cinnamon (for topping)
- 1/4 teaspoon salt
- 1/2 cup (1 stick) cold unsalted butter, cut into small cubes
Instructions
- Preheat your oven to 375°F (190°C). Lightly butter a 9×13 inch baking dish.
- In a large bowl, gently combine the sliced peaches, 1/2 cup granulated sugar, cornstarch, lemon juice, vanilla extract (if using), and 1/2 teaspoon cinnamon (if using). Pour the peach mixture into the prepared baking dish.
- In a separate medium bowl, whisk together the flour, oats, brown sugar, 1/4 cup granulated sugar, 1/2 teaspoon cinnamon, and salt for the topping.
- Add the cold, cubed butter to the dry topping ingredients. Use a pastry blender, your fingertips, or a fork to cut the butter into the mixture until coarse crumbs form. (Alternatively, pulse in a food processor a few times until crumbly).
