- 3 tablespoons cornstarch (for coating potatoes)
- 1/2 teaspoon black pepper

- 1 tablespoon sesame oil
- 2 cloves garlic, minced
- 1 inch ginger, grated or minced
- 1/2 medium onion, thinly sliced
- 1/2 green bell pepper, thinly sliced (optional)
- 2 green chillies, slit lengthwise (adjust to taste)
- 2 tablespoons soy sauce (light)
- 1 tablespoon red chilli sauce (e.g., Sriracha or Schezwan)
- 2 tablespoons honey
- 1 tablespoon rice vinegar or white vinegar
- 1/2 teaspoon red chilli flakes (optional)
- 1 tablespoon cornstarch mixed with 2 tablespoons water (for slurry)
- 2 tablespoons white sesame seeds, toasted (for garnish)
- Fresh coriander leaves, chopped (for garnish)
Instructions
- Prepare the Potatoes: Wash the cut potato pieces thoroughly to remove excess starch. Pat them completely dry with a kitchen towel. In a large bowl, toss the dry potato pieces with 2 tablespoons of cornstarch, salt, and black pepper until evenly coated.
- First Fry: Heat oil in a deep pan or wok over medium-high heat. Once hot, carefully add the coated potato pieces in batches, ensuring not to overcrowd the pan. Fry for 4-5 minutes until they are lightly golden and cooked through. Remove and drain on paper towels. This is the first fry.
