Ingredients
- 1 pound rotini or fusilli pasta
- 2 large cooked chicken breasts, diced or shredded
- 1 pound lean ground beef
- 8-10 slices thick-cut bacon, cooked crispy and crumbled
- 1/2 pound thinly sliced deli roast beef, chopped
- 1.5 – 2 cups prepared ranch dressing (or homemade)
- 1 pint cherry tomatoes, halved
- 1 large bell pepper (any color), diced
- 1/2 small red onion, finely diced
- 1.5 cups shredded cheddar cheese
- 1 cup frozen corn, thawed and drained
- 1/2 cup sliced black olives, drained
- 1 teaspoon garlic powder
- Salt and freshly ground black pepper to taste
- 2 tablespoons fresh parsley or chives, chopped (for garnish, optional)
Instructions
- Cook the pasta according to package directions until al dente. Drain, rinse thoroughly with cold water to stop cooking and cool, then set aside in a large mixing bowl.
- While the pasta cooks, prepare your proteins. Cook the bacon until crispy. Drain on paper towels, then crumble once cooled. Set aside.
- In a skillet over medium-high heat, cook the ground beef with garlic powder, salt, and pepper until no longer pink. Drain any excess grease and set aside.
- If your chicken breasts aren’t already cooked, boil, bake, or pan-fry them until cooked through, then dice or shred. Set aside.
- Chop the deli roast beef into small, bite-sized pieces.
