Ingredients

  • 2 (15-ounce) cans large butter beans (lima beans), rinsed and drained
  • 1 tablespoon olive oil
  • 1/2 yellow onion, finely diced
  • 2 cloves garlic, minced
  • 4 cups vegetable broth (or chicken broth)
  • 1/2 cup heavy cream (or full-fat coconut milk for dairy-free)
  • 2 tablespoons unsalted butter
  • 1 tablespoon all-purpose flour (optional, for extra thickness)
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (optional, for a kick)
  • Salt and freshly ground black pepper to taste
  • 2 tablespoons fresh parsley, chopped, for garnish

Instructions

  1. In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion and cook until softened and translucent, about 5-7 minutes.
  2. Add the minced garlic and cook for another minute until fragrant, being careful not to burn it.
  3. Stir in the smoked paprika and cayenne pepper (if using), cooking for 30 seconds until aromatic.
  4. Add the rinsed and drained butter beans to the pot. Pour in the vegetable broth and bring the mixture to a gentle simmer. Reduce heat to low, cover, and let it simmer for 15-20 minutes, allowing the flavors to meld.
  5. While the beans are simmering, in a small saucepan, melt the unsalted butter over medium heat. If using, whisk in the all-purpose flour and cook for 1 minute to create a roux.
  6. Gradually whisk in the heavy cream (or coconut milk) into the roux until smooth. If not using flour, simply warm the heavy cream in a small saucepan.
  7. Stir the creamy mixture into the pot with the butter beans.
  8. Continue to simmer uncovered for another 5-10 minutes, or until the sauce has thickened slightly to your desired consistency.
  9. Taste and season generously with salt and freshly ground black pepper. Adjust seasonings as needed.
  10. Ladle the creamy butter beans into bowls, garnish with fresh chopped parsley, and serve warm.
