Ingredients

  • 1 cup long-grain white rice (such as basmati or jasmine)
  • 2 cups vegetable or chicken broth
  • 1 tablespoon olive oil
  • 1/2 small onion, finely diced
  • 2 cloves garlic, minced
  • Zest of 1 large lemon
  • Juice of 1/2 lemon (about 2 tablespoons)
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh dill, chopped (or other soft herbs like mint or chives)
  • Salt and freshly ground black pepper to taste

Instructions

  1. Rinse the rice under cold water until the water runs clear. Drain well.
  2. In a medium saucepan, heat the olive oil over medium heat. Add the diced onion and cook until softened and translucent, about 3-4 minutes.
  3. Add the minced garlic and cook for another minute until fragrant, being careful not to burn it.
  4. Stir in the rinsed rice, coating it with the oil and aromatics. Cook for 1-2 minutes, stirring constantly.
  5. Pour in the vegetable or chicken broth. Add a pinch of salt and pepper. Bring to a boil, then reduce heat to low, cover tightly, and simmer for 15-18 minutes, or until all the liquid is absorbed and the rice is tender. Do not lift the lid during this time.
  6. Once cooked, remove the saucepan from the heat and let it sit, covered, for 5 minutes.
  7. Fluff the rice gently with a fork. Stir in the lemon zest, lemon juice, chopped parsley, and dill. Taste and adjust seasoning with more salt, pepper, or lemon juice if needed.
  8. Serve warm as a delicious side dish.
