Ingredients
- 1 cup long-grain white rice (such as basmati or jasmine)
- 2 cups vegetable or chicken broth
- 1 tablespoon olive oil
- 1/2 small onion, finely diced
- 2 cloves garlic, minced
- Zest of 1 large lemon
- Juice of 1/2 lemon (about 2 tablespoons)
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh dill, chopped (or other soft herbs like mint or chives)
- Salt and freshly ground black pepper to taste
Instructions
- Rinse the rice under cold water until the water runs clear. Drain well.
- In a medium saucepan, heat the olive oil over medium heat. Add the diced onion and cook until softened and translucent, about 3-4 minutes.
- Add the minced garlic and cook for another minute until fragrant, being careful not to burn it.
- Stir in the rinsed rice, coating it with the oil and aromatics. Cook for 1-2 minutes, stirring constantly.
- Pour in the vegetable or chicken broth. Add a pinch of salt and pepper. Bring to a boil, then reduce heat to low, cover tightly, and simmer for 15-18 minutes, or until all the liquid is absorbed and the rice is tender. Do not lift the lid during this time.
- Once cooked, remove the saucepan from the heat and let it sit, covered, for 5 minutes.
- Fluff the rice gently with a fork. Stir in the lemon zest, lemon juice, chopped parsley, and dill. Taste and adjust seasoning with more salt, pepper, or lemon juice if needed.
- Serve warm as a delicious side dish.
