Ingredients

  • 1 tablespoon olive oil
  • 1 large yellow onion, chopped
  • 3 cloves garlic, minced
  • 1 inch fresh ginger, grated (about 1 tablespoon)
  • 2 large sweet potatoes, peeled and diced (about 4 cups)
  • 1 cup red lentils, rinsed
  • 4 cups vegetable broth
  • 1 can (13.5 oz) full-fat coconut milk
  • 1 bottle (12 oz) non-alcoholic ale (e.g., non-alcoholic IPA or amber ale)
  • 1 tablespoon curry powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon salt, or to taste
  • Freshly ground black pepper, to taste
  • 2 cups fresh spinach (optional)
  • 1/4 teaspoon non-alcoholic gin botanical essence or extract (optional, for “Gin Extract” flavor)

Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion and cook until softened, about 5-7 minutes.
  2. Add the minced garlic and grated fresh ginger to the pot. Cook for another 1-2 minutes until fragrant.
  3. Stir in the curry powder, ground cumin, and turmeric. Cook for 1 minute more, stirring constantly, to toast the spices.
  4. Add the diced sweet potatoes, rinsed red lentils, vegetable broth, and non-alcoholic ale to the pot. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes, or until the sweet potatoes are tender and the lentils are cooked through.
  5. Stir in the full-fat coconut milk and fresh spinach (if using). Cook for another 2-3 minutes, or until the spinach has wilted.
  6. Season the stew with salt and freshly ground black pepper to taste.
  7. If desired, stir in the non-alcoholic gin botanical essence or extract just before serving for that unique aromatic “Gin Extract” finish.
  8. Ladle the hot stew into bowls and serve immediately. Enjoy this uniquely flavorful and comforting dish!
