Frozen Lemon Shell Sorbetto- Zesty Dessert Delight

Ingredients

  • 6 large firm lemons
  • 1 cup granulated sugar
  • 1 cup water
  • 1 ½ cups freshly squeezed lemon juice (from 6-8 lemons)
  • 2 tablespoons lemon zest (from 2-3 lemons)
  • Pinch of salt (optional)

Instructions

  1. Prepare the Lemon Shells: Wash the lemons thoroughly. Cut each lemon in half crosswise. Using a small spoon, a grapefruit spoon, or a serrated grapefruit knife, carefully scoop out all the pulp and juice from each lemon half. Be careful not to pierce the skin. Reserve the juice and pulp for the sorbetto.
  2. Clean the Shells: Scrape the inside of the lemon halves until clean. Invert them on a paper towel to drain any excess liquid. Place the empty lemon shells in a freezer-safe container or on a baking sheet and freeze for at least 2 hours, or until solid.
  3. Make the Simple Syrup: In a medium saucepan, combine the granulated sugar and 1 cup of water. Heat over medium heat, stirring constantly, until the sugar completely dissolves. Bring to a gentle boil, then remove from heat. Let the simple syrup cool completely to room temperature.
  4. Prepare the Sorbetto Base: Once the simple syrup is cool, strain the reserved lemon juice from the scooped-out lemons (discarding any seeds or large pulp pieces). You should have about 1 ½ cups of juice. Combine the cooled simple syrup with the strained lemon juice, lemon zest, and a pinch of salt (if using). Stir well.
  5. Churn the Sorbetto: Pour the sorbetto base into an ice cream maker and churn according to the manufacturer’s instructions, usually 20-30 minutes, until it reaches a soft-serve consistency.
  6. Freeze the Sorbetto: If serving immediately, the soft sorbetto can be spooned directly into the frozen lemon shells. For a firmer consistency, transfer the churned sorbetto to an airtight container and freeze for at least 2-4 hours.
  7. Assemble and Serve: Once the sorbetto is firm, remove the frozen lemon shells from the freezer. Scoop the lemon sorbetto into each frozen lemon shell, mounding it slightly. Garnish with a fresh mint leaf or a thin lemon slice if desired. Serve immediately and enjoy!
