- 1/2 small yellow onion, finely diced
- 2 cloves garlic, minced
- 1 lb large shrimp, peeled and deveined (tails on or off)
- 1 (15 oz) can creamed corn
- 1/2 cup chicken broth or milk (optional, for desired consistency)
- 1/2 tsp smoked paprika
- 1/2 tsp Old Bay seasoning (optional, but highly recommended)
- Salt and freshly ground black pepper to taste
- Fresh parsley or chives, chopped (for garnish)
Instructions
- 1. Pat the shrimp dry with paper towels. Season lightly with salt and pepper.
- 2. Heat the olive oil or butter in a large skillet or pan over medium heat. Add the diced onion and cook until softened and translucent, about 3-4 minutes.
- 3. Add the minced garlic to the pan and cook for another minute until fragrant, being careful not to burn it.
- 4. Add the seasoned shrimp to the pan and cook for 1-2 minutes per side, just until they start to turn pink and opaque. Do not overcook. Remove the shrimp from the pan and set aside on a plate.
- 5. Pour the can of creamed corn into the same skillet. Stir in the smoked paprika and Old Bay seasoning. If the mixture appears too thick, stir in 1/2 cup of chicken broth or milk until it reaches your desired creamy consistency.
- 6. Bring the corn mixture to a gentle simmer, stirring occasionally, for 3-5 minutes, allowing the flavors to meld and the sauce to warm through.
- 7. Return the cooked shrimp to the pan, stirring gently to coat them in the creamy corn sauce. Cook for just 1 minute more to heat the shrimp through.
- 8. Taste and adjust seasonings as needed, adding more salt, pepper, or Old Bay if desired. Garnish generously with fresh chopped parsley or chives before serving immediately.
