Ingredients
- 1 tablespoon olive oil
- 1 large yellow onion, chopped
- 3 cloves garlic, minced
- 1 inch fresh ginger, grated (about 1 tablespoon)
- 2 large sweet potatoes, peeled and diced (about 4 cups)
- 1 cup red lentils, rinsed
- 4 cups vegetable broth
- 1 can (13.5 oz) full-fat coconut milk
- 1 bottle (12 oz) non-alcoholic ale (e.g., non-alcoholic IPA or amber ale)
- 1 tablespoon curry powder
- 1 teaspoon ground cumin
- 1/2 teaspoon turmeric
- 1/2 teaspoon salt, or to taste
- Freshly ground black pepper, to taste
- 2 cups fresh spinach (optional)
- 1/4 teaspoon non-alcoholic gin botanical essence or extract (optional, for “Gin Extract” flavor)
Instructions
- Heat the olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion and cook until softened, about 5-7 minutes.
- Add the minced garlic and grated fresh ginger to the pot. Cook for another 1-2 minutes until fragrant.
- Stir in the curry powder, ground cumin, and turmeric. Cook for 1 minute more, stirring constantly, to toast the spices.
- Add the diced sweet potatoes, rinsed red lentils, vegetable broth, and non-alcoholic ale to the pot. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes, or until the sweet potatoes are tender and the lentils are cooked through.
- Stir in the full-fat coconut milk and fresh spinach (if using). Cook for another 2-3 minutes, or until the spinach has wilted.
- Season the stew with salt and freshly ground black pepper to taste.
- If desired, stir in the non-alcoholic gin botanical essence or extract just before serving for that unique aromatic “Gin Extract” finish.
- Ladle the hot stew into bowls and serve immediately. Enjoy this uniquely flavorful and comforting dish!
