Gyeran Mari Korean Rolled Omelette Recipe Easy

Gyeran Mari, or Korean Rolled Omelette, is a beloved banchan (side dish) that’s surprisingly easy to master at home. Light, fluffy, and packed with customizable flavor, it’s perfect for breakfast, lunchboxes, or as a vibrant addition to any Korean meal. Ingredients

  • 5 large eggs
  • 1 tablespoon milk or water (optional, for fluffier eggs)
  • 1/4 teaspoon salt
  • Pinch of black pepper
  • 2 tablespoons finely chopped carrot (optional)
  • 2 tablespoons finely chopped green onion (optional)
  • 1 teaspoon cooking oil (vegetable, canola, or sesame oil)

Instructions

  1. In a medium bowl, whisk the eggs thoroughly. Add milk or water (if using), salt, and pepper. Continue whisking until the mixture is well combined and slightly frothy, but avoid over-whipping to prevent too many air bubbles.
  2. If using, stir in the finely chopped carrots and green onions into the egg mixture. Ensure the vegetables are very small so they don’t tear the omelette while rolling.
  3. Heat a non-stick rectangular pan (or a small round pan) over medium-low heat. Add 1/2 teaspoon of cooking oil and spread it evenly with a paper towel or brush. This ensures a thin, even coating and prevents sticking.
  4. Pour about 1/4 to 1/3 of the egg mixture into the pan, tilting the pan to spread it into a thin, even layer that covers the bottom. Let it cook for about 1-2 minutes, or until the edges begin to set and the top is mostly cooked but still slightly wet.
  5. Using a spatula, gently roll the cooked egg layer from one end of the pan to the other, creating a tight log. Push the rolled egg to one side of the pan.
  6. Add another 1/4 to 1/3 of the egg mixture to the empty space in the pan, ensuring some of the new egg mixture goes underneath the rolled omelette. This helps the new layer adhere to the previous one.
  7. Once the new layer is mostly set, gently roll the existing omelette log over the newly cooked egg, continuing the roll. Repeat this process with the remaining egg mixture until all the egg has been used and you have a thick, multi-layered log.
  8. After the last roll, continue to cook the omelette log for another 1-2 minutes, rotating it gently to ensure all sides are lightly golden brown and fully cooked through. This helps firm up the shape.
  9. Carefully transfer the Gyeran Mari to a cutting board. Let it cool for a few minutes before slicing into 1/2 to 3/4-inch thick pieces. Serve warm or at room temperature as a side dish, in lunchboxes, or as a light snack.
