Ingredients

  • 1 lb very thinly sliced beef (such as sukiyaki beef, or flank/sirloin sliced against the grain)
  • 1 cup fresh Thai basil leaves, packed
  • 2 cloves garlic, minced
  • 1-2 small red bird’s eye chilies, minced (optional, adjust to taste)
  • 1 tbsp cooking oil
  • 2 tbsp oyster sauce
  • 1 tbsp light soy sauce
  • 1 tsp fish sauce
  • 1 tsp brown sugar
  • 1/4 tsp white pepper
  • 2 tbsp water or beef broth

Instructions

  1. If not pre-sliced, slice the beef very thinly against the grain (partially freezing the beef for 20-30 minutes can make slicing easier). Pat the beef slices dry with paper towels.
  2. Wash and thoroughly dry the fresh Thai basil leaves. Set aside.
  3. In a small bowl, whisk together the oyster sauce, light soy sauce, fish sauce, brown sugar, white pepper, and water or beef broth. Set aside.
  4. Lay a beef slice flat on a clean surface. Place 2-3 Thai basil leaves at one end of the beef slice. Tightly roll the beef slice around the basil leaves. Repeat this process with all the beef slices and basil.
  5. Heat the cooking oil in a large skillet or wok over medium-high heat. Add the minced garlic and chilies (if using) and stir-fry for about 30 seconds until fragrant.
  6. Place the beef rolls seam-side down in the hot skillet. Cook for 1-2 minutes until the bottom is browned, then turn and sear on all sides until cooked through, about 4-6 minutes total, depending on the thickness of your beef. Cook in batches if necessary to avoid overcrowding the pan, which can steam the beef instead of searing it.
  7. Once the beef rolls are cooked, pour the prepared sauce over them. Toss gently to coat all the rolls in the sauce. Cook for another 1-2 minutes, stirring occasionally, until the sauce has thickened slightly and beautifully coats the beef.
  8. Remove from heat and serve immediately. Garnish with extra fresh basil or lime wedges if desired. Enjoy these delicious rolls on their own or with a side of steamed rice!
