  • 1 head broccoli, cut into bite-sized florets
  • 1 red bell pepper, thinly sliced
  • 1 cup snap peas
  • 1 large carrot, julienned or thinly sliced
  • 1/2 yellow onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • For the Stir-Fry Sauce:
  • 1/4 cup soy sauce
  • 2 tbsp oyster sauce (optional, but recommended)
  • 1 tbsp rice vinegar
  • 1 tbsp brown sugar
  • 1 tsp sesame oil
  • 1 tsp cornstarch
  • 2 tbsp water or beef broth
  • Cooked rice or noodles, for serving (optional)
  • Sesame seeds, for garnish (optional)

Instructions

  1. **Prepare the Beef:** In a medium bowl, combine the thinly sliced beef with 1 tbsp soy sauce and 1 tsp cornstarch. Toss to coat and set aside for at least 10 minutes while you prep the vegetables.
  2. **Make the Sauce:** In a small bowl, whisk together all the stir-fry sauce ingredients: 1/4 cup soy sauce, oyster sauce (if using), rice vinegar, brown sugar, sesame oil, 1 tsp cornstarch, and water or beef broth. Set aside.
  3. **Cook the Beef:** Heat 1 tbsp vegetable oil in a large skillet or wok over medium-high heat until shimmering. Add the beef in a single layer and cook for 2-3 minutes per side until browned and cooked through. Remove the beef from the skillet and set aside.
  4. **Sauté Vegetables:** Add the remaining 1 tbsp vegetable oil to the same skillet. Add broccoli florets and carrots, stir-fry for 3-4 minutes until slightly tender-crisp.

  6. **Combine & Sauce:** Return the cooked beef to the skillet with the vegetables. Give the prepared stir-fry sauce a quick whisk (cornstarch settles) and pour it over the beef and vegetables. Toss everything to coat evenly and cook for 1-2 minutes, allowing the sauce to thicken.
