Lemon Blueberry Truffles-Easy Gourmet Treat

Ingredients

  • 8 oz cream cheese, softened
  • 1 ½ cups powdered sugar
  • 1 ½ cups vanilla wafer crumbs (about 40 wafers, crushed)
  • 1 tbsp lemon zest, plus more for garnish
  • 1 tbsp fresh lemon juice
  • ¼ cup blueberry preserves or jam
  • 16 oz white chocolate melting wafers or good quality white chocolate chips
  • 1 tsp coconut oil (optional, for smoother coating)
  • Freeze-dried blueberry powder or extra lemon zest for garnish (optional)

Instructions

  1. In a medium bowl, beat the softened cream cheese with an electric mixer until smooth.
  2. Add the powdered sugar, lemon zest, and lemon juice, beating until fully combined and creamy.
  3. Stir in the vanilla wafer crumbs and blueberry preserves until well incorporated. The mixture should be thick and slightly sticky.
  4. Cover the bowl and refrigerate the truffle mixture for at least 1 hour, or until firm enough to roll.
  5. Once chilled, scoop out small portions (about 1 tablespoon each) and roll them into smooth balls. Place the rolled truffles on a parchment-lined baking sheet.
  6. Return the truffles to the refrigerator or freezer for another 15-20 minutes to firm up again before coating.
  7. Melt the white chocolate in a microwave-safe bowl in 30-second intervals, stirring after each, until smooth. If using, stir in the coconut oil for a thinner consistency.
  8. Dip each chilled truffle into the melted white chocolate, ensuring it’s fully coated. Use a fork or a dipping tool to gently tap off excess chocolate.
  9. Place the coated truffles back on the parchment-lined baking sheet. While the chocolate is still wet, sprinkle with additional lemon zest or freeze-dried blueberry powder, if desired.
  10. Allow the truffles to set at room temperature or in the refrigerator until the chocolate is firm. Store in an airtight container in the refrigerator for up to a week.
