Ingredients
- 2 tbsp olive oil (or avocado oil)
- 2 medium zucchini, trimmed and cut into 1/2-inch half-moons or quarter-moons
- 8 oz cremini mushrooms (baby bellas), wiped clean and sliced
- 2 cloves garlic, minced
- 1/2 tsp dried oregano (or Italian seasoning)
- Salt to taste
- Black pepper to taste
- 1 tbsp fresh parsley, chopped (for garnish, optional)
Instructions
- Heat olive oil in a large skillet or non-stick pan over medium-high heat.
- Add sliced mushrooms to the hot skillet. Cook for 3-5 minutes, stirring occasionally, until they release their liquid and start to brown. This helps develop their flavor.
- Add the zucchini to the skillet with the mushrooms. Stir well to combine.
- Add minced garlic, dried oregano, salt, and black pepper. Stir everything together.
- Continue to cook for another 5-7 minutes, stirring occasionally, until the zucchini is tender-crisp and the mushrooms are nicely browned. Be careful not to overcook the zucchini; it should still have a slight bite.
