Sumac Potato Salad – Tangy Flavor-Packed Recipe

Ingredients

  • 2 lbs (about 4-5 medium) Yukon Gold or red potatoes, scrubbed and cut into 1-inch cubes
  • 1/4 cup extra virgin olive oil
  • 3 tablespoons fresh lemon juice
  • 2 tablespoons sumac
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped (optional, but highly recommended)
  • 1/4 cup red onion, finely diced (optional)
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper, or to taste
  • Optional garnish: extra sumac, fresh mint sprigs

Instructions

  1. Place the cubed potatoes in a large pot and cover with cold, salted water by about an inch. Bring to a boil over medium-high heat, then reduce heat and simmer until potatoes are tender when pierced with a fork, about 10-15 minutes. Be careful not to overcook them to prevent mushiness.
  2. While the potatoes are cooking, prepare the dressing. In a small bowl, whisk together the extra virgin olive oil, fresh lemon juice, sumac, minced garlic, salt, and black pepper until well combined.
  3. Drain the cooked potatoes thoroughly and let them cool for a few minutes in the colander to allow excess steam to escape. Transfer the warm potatoes to a large mixing bowl.
  4. Pour the prepared dressing over the warm potatoes. Add the chopped fresh parsley, mint (if using), and diced red onion (if using). Gently toss everything together until the potatoes are evenly coated. The warmth of the potatoes will help them absorb the flavors.
  5. Taste and adjust seasoning if necessary. You might want more salt, pepper, or a pinch more sumac.
  6. Cover the bowl and refrigerate for at least 30 minutes, or ideally 2-3 hours, to allow the flavors to meld and develop.
  7. Serve chilled or at room temperature. Garnish with a sprinkle of extra sumac and a few fresh mint sprigs before serving.
