Easy Thai Peanut Chicken Wraps – Quick & Delicious

Ingredients

  • 1 lb boneless, skinless chicken breast, cooked and shredded (rotisserie chicken works great for speed!)
  • 8-10 large lettuce leaves (butter, romaine, or green leaf lettuce), washed and dried
  • 1 cup shredded carrots
  • 1 red bell pepper, thinly sliced or julienned
  • 1/2 cucumber, thinly sliced or julienned
  • 1/4 cup fresh cilantro, chopped (for garnish)
  • 2 tbsp chopped peanuts (for garnish, optional)
  • 2 green onions, thinly sliced (for garnish, optional)
  • For the Easy Peanut Sauce:
  • 1/2 cup creamy peanut butter
  • 3 tbsp soy sauce (or tamari for gluten-free)
  • 2 tbsp rice vinegar
  • 1 tbsp honey or maple syrup
  • 1 tsp sesame oil
  • 1 tsp grated fresh ginger
  • 1 clove garlic, minced
  • 1 tbsp fresh lime juice
  • 1/2 tsp sriracha (or more, to taste)
  • 2-4 tbsp water (to thin, as needed)

Instructions

  1. 1. If using raw chicken, cook the chicken breast by sautéing, grilling, or boiling until fully cooked. Let cool slightly, then shred or dice into bite-sized pieces.
  2. 2. Prepare the peanut sauce: In a medium bowl, whisk together the peanut butter, soy sauce, rice vinegar, honey, sesame oil, grated ginger, minced garlic, lime juice, and sriracha. Gradually add water, 1 tablespoon at a time, until the sauce reaches your desired creamy, pourable consistency.
  3. 3. In a large bowl, combine the shredded cooked chicken with about half of the peanut sauce. Toss until the chicken is well coated. Add more sauce to taste if desired.
  4. 4. Lay out the large lettuce leaves. Evenly divide the sauced chicken mixture among the leaves.
