Ultimate Stuffed Mushrooms-Baked Potatoes

Ingredients

  • 4 large Russet potatoes
  • 1 tablespoon olive oil, plus more for mushroom sautéing
  • 1 teaspoon salt, plus more to taste
  • 1/2 teaspoon black pepper, plus more to taste
  • 2 tablespoons unsalted butter
  • 1 small yellow onion, finely diced
  • 2 cloves garlic, minced
  • 1 pound mixed mushrooms (cremini, shiitake, oyster), roughly chopped
  • 1/2 cup vegetable or chicken broth
  • 1 tablespoon fresh thyme leaves, chopped
  • 4 ounces cream cheese, softened
  • 1/4 cup sour cream (or Greek yogurt)
  • 1/2 cup shredded Gruyere or sharp white cheddar cheese, divided
  • 2 tablespoons fresh chives, chopped, divided
  • Optional: 1/4 cup panko breadcrumbs for topping
  • Optional: 2 tablespoons fresh parsley, chopped, for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Scrub the potatoes thoroughly under running water and pat them dry. Pierce each potato several times with a fork. Rub the outside of each potato with olive oil, then sprinkle generously with salt and black pepper.
  3. Place the seasoned potatoes directly on the oven rack and bake for 50-70 minutes, or until they are very tender when squeezed or pierced with a fork.
  4. While the potatoes are baking, prepare the mushroom filling: Melt the butter (or additional olive oil) in a large skillet over medium heat. Add the diced onion and cook until softened, about 5 minutes. Stir in the minced garlic and cook for another minute until fragrant.
  5. Add the chopped mushrooms to the skillet. Cook, stirring occasionally, until the mushrooms release their liquid and begin to brown, about 8-10 minutes. Pour in the broth and continue to cook until most of the liquid has evaporated. Stir in the fresh thyme. Season with salt and pepper to taste. Remove from heat and set aside.
  6. Once the potatoes are baked, carefully remove them from the oven. Let them cool for a few minutes until they are cool enough to handle. Halve each potato lengthwise.
  7. Gently scoop out the potato flesh into a large bowl, being careful to leave a thin shell (about 1/4 inch thick) intact so the potato skins hold their shape.
  8. To the scooped potato flesh, add the softened cream cheese, sour cream, half of the shredded Gruyere cheese, and half of the chopped chives. Mash until the mixture is smooth and creamy. Season with salt and pepper to taste.
  9. Gently fold the mushroom mixture into the mashed potato mixture until well combined.
  10. Spoon the ultimate mushroom potato filling back into the potato shells, mounding it slightly.
  11. Place the stuffed potatoes on a baking sheet. Sprinkle the remaining Gruyere cheese (and optional panko breadcrumbs, if using) evenly over the top of each potato.
  12. Bake for an additional 15-20 minutes, or until the cheese is melted and bubbly and the filling is heated through. For an extra golden-brown top, you can broil for the last 2-3 minutes, watching carefully to prevent burning.
  13. Garnish with the remaining fresh chives (and optional parsley) before serving hot. Enjoy!
